Mint Couscous
Description:
African in origin, couscous is a type of tiny wheat pasta, finer in size than rice. It easily absorbs a wide range of flavors. It can be prepared up to two days ahead and reheated in a microwave. Ingredients: 3 1/2 cups water 1 1/2 tablespoons dried thyme, crumbled between fingers to release the flavor 1/2 cup olive oil 1/2 teaspoon salt 2 1/2 cups couscous packed 1/4 cup chopped fresh mint, or 2 teaspoons dried, crumbled mint fresh ground black pepper Directions: Bring water to a boil in a 5-quart saucepan. Add thyme, oil and 1/2 teaspoon salt. Remove from heat and add couscous. Cover pan and let stand for 10 minutes, until the couscous has absorbed all the liquid and is tender and fluffy. Add mint and flavor with pepper.
