Pumpkin Soup

This is a fabulous quick and simple soup that is hearty and filling. It's also great for Pumpkin Spice fans!

1 large onion, diced
2 Tbs butter, melted
4 cups chicken broth
1 (15oz) can pumpkin puree
1/2 tsp cinnamon
1/2 tsp ginger
salt and pepper to taste
1 cup heavy whipping cream

Saute onion in butter in a medium saucepan until tender. Add 2 cups chicken broth and bring to a boil. Reduce heat and simmer 15 minutes.
Use a hand blender to process until smooth.
Add remaining chicken broth, pumpkin, cinnamon, ginger, salt and pepper. Stir well. Bring to a boil, reduce heat, and simmer 10 minutes, stirring occasionally.
Stir in whipping cream and heat through. Be careful not to boil.
Serve hot and enjoy!
