Ultimate Pear Ginger Pancakes
Description:
These gingery pancakes not only taste good, but they are good for you! Ingredients: 1 egg 1 C milk 2 T vegetable oil 1 C all-purpose flour 1 t baking powder 1/2 t baking soda 1/2 t salt 1/2 t ground ginger 1/4 C firmly packed brown sugar 1/2 C quick-cooking oats, uncooked 2 ripe pears, sliced thin Directions: Preheat griddle to 275 degrees. Beat egg, add milk and oil, mixing well. Combine flour and the next 5 ingredients. Add to egg mixture, mixing until blended. Stir in oats. For each pancake, pour about 1/4 c batter onto a hot, lightly buttered griddle. Press pear slices into the tops of the pancakes. Flip when tops are covered with bubbles and edges look cooked. Yield: about 8 pancakes To serve, place on a warmed plate and sprinkle with powdered sugar. For an extra special treat, top with warm 100% Real Maple Syrup.
