Southwest Breakfast Bake

Description: This is a great one dish breakfast casserole that you can make for a special morning meal or brunch. Savory, slightly spicy, and wonderfully satisfying! You can also assemble it the night before, refrigerate, and bake it in the morning. Simply bring Ingredients: 1 lb ground sausage (your choice of chorizo, turkey, hot or mild Italian) 4 small cans chopped green chilies 8 small tortillas(corn or wheat), cut into 1/2 inch strips 2 cups shredded cheddar cheese 1(14oz) can diced tomatoes, drained 12 eggs 1 1/2 cups milk 1/2 tsp salt 1/2 tsp pepper 2 cloves garlic, chopped 1 tsp ground cumin 2 tsp dried onion flakes 2 cups each sour cream and salsa Optional- chopped cilantro for garnish Directions: Scramble fry the sausage and drain off the fat. Preheat the oven to 350 degrees F. Grease either a 9x13 inch baking dish or 2 (9 inch) deep-dish pie plates. Put 2 cans of chopped chilies in the bottom of prepared dish(es). Layer with half the tortillas, then half of the sausage, and half of the cheese. Repeat layers, beginning with the green chilies. Arrange diced tomatoes on top. Beat eggs, milk, salt, pepper, garlic, cumin, and onion flakes together. Pour carefully over the tortilla mix. Allow to sit for at least 30 minutes before baking, for the tortillas to absorb the liquid. Bake uncovered for about 45 minutes or until a knife inserted in the center comes out clean. Serve with sour cream, salsa, and chopped cilantro.
