Rhubarb Cobbler

A wonderful old fashion dish, we serve it for breakfast but it also doubles as dessert with a scoop of vanilla icecream.

4 cups fresh rhubarb
2/4 Cup sugar
1/4 Cup Orange Juice
1 tsp. cinnamon
1 tsp. grated orange rind
1 Cup rolled oats
1/2 Cup flour
1/2 Cup brown sugar
1 tsp Cinnamon
2/3 Cup butter cut into chunks

Mix first 5 ingredents together. Place in a 9" pan that has been sprayed with Pam.
Place flour,sugar,cinnamon & butter in processor, process on/off till mix resembles corn meal. remove, ad oats, mix and sprinkle over fruit mix.
Bake 350 for 25 min.
