Guests can't get enough of these super moist and nutty muffins. We love them because they are super easy to prepare and come out perfect every time! Ingredients: 4 eggs 2 tsp baking powder 2 tsp baking soda 1 tsp salt 3 cups flour 1 Tbsp cinnamon 2 cups raisins 1 cup walnut pieces 2 cups sugar 1.5 cup canola oil 1.75 cup canned pumpkin Directions: Preheat oven to 375 degrees. Grease muffin tins or use muffin liners. Combine all dry ingredients. In a large bowl mix together pumpkin, oil and eggs. Add wet to dry along with the raisins and nuts. Do not over mix. Fill muffin tins about 3/4 full.
