Apple Nut Bread

1/2 c. butter, softened
1 c. plus 2 tablespoons sugar, divided
2 eggs
1/2 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 T. buttermilk
1 c. apple, peeled and grated
1 c. nuts, chopped
3/4 tsp. ground cinnamon

In a large mixing bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. Pour into a greased and floured 9x5x3 loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350 degrees F for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.
