Baked Bananas
Description:
We serve this on a cold winter morning as our fruit dish. A main entree follows. For guests who choose not to have an egg dish, this is perfect for them. Ingredients: 6 ripe bananas, peeled 2 cups orange juice 2 teaspoon vanilla extract 1 cup all purpose flour 1 cup cooking oats 1 1/2 cups brown sugar 1 teaspoon ground nutmeg 1 teaspoon salt 12 tablespoons cold butter Directions: Slice bananas and place in 6 greased, 1-cup ramekins or custard cups. In a large bowl, combine flour, oats, brown sugar, nutmeg and salt. Cut in butter until mixture resembles small peas (I often do this in my Cuisinart - easy and fast); spoon crumble mixture evenly over fruit. In a large measuring cup, combine orange juice and vanilla - pour over bananas and topping. Serve warm with whipped cream or ice cream.
