Maitre D'butter

Adds a wonderful flavor to grilled meats.

1 pound butter
1 tablespoon finely chopped garlic
1 tablespoon finely chopped parsley
Salt if using unsalted butter
Lemon juice

Set butter in bowl to soften at room temperature. Add garlic and parsley, season with lemon juice, pepper. If using unsalted butter you will need to add sale. Mix well. Roll butter into waxed paper or plastic wrap, place in refrigerator or freezer. When needed cut a clie and place it on hot meats, fish or paste. The butter will melt and mix with the juice of food you're pairing it with to make a sauce.

Basil Butter - follow instruction above adding chopped basil
Herb d'Provence Butter - follow instruction above adding her d'Provence (a mix of rosemary, thyme, savory, fennel seed, basil, lavender and marjoram).
