Blueberry Pancakes
Description:
Adults as well as children love these pancakes. We always serve with powdered sugar, butter and warm maple syrup. Ingredients: 1 1/2 cups white flour 1 1/2 cups wheat flour 2 tablespoons baking powder 1/2 teaspoon salt 3 tablespoons sugar 4 eggs 2 1/2 cups buttermilk 4 tablespoons melted butter 1/2 pound of fresh or frozen blueberries Directions: Combine wet ingredients and mix well. In a separate bowl, mix together dry ingredients. Slowly mix wet into dry, stirring thoroughly as you do to prevent lumps. Fold in blueberries and spoon onto hot griddle. If you use frozen berries, do not add to batter; rather, sprinkle them directly on the pancakes as they cook.
