Best Banana Bread

Description:
Best Banana Bread or Muffin Recipe, moist and not overly sweet

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup neutral oil (90/10 okay)
1/2 cup white sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs, beaten
2 1/3 cups mashed overripe bananas
Milk or buttermilk (better flavor) to moisten, as needed.
Variation: Add 3/4 cup semi-sweet chocolate chips

Directions:
Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg and salt.
In a separate bowl, cream together oil, vanilla and brown sugar. Stir in eggs and mashed bananas until well blended.
Stir banana mixture into flour mixture; stir just to moisten, adding milk or buttermilk as needed. Stir in chocolate chips, if using. Pour batter into prepared loaf pan.
Bake in preheated oven for 70 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. … If baking Muffins, bake only for 30-35 minutes, or 25 minutes in convection ove.
