Best Buttermilk Pancakes

Ingredients:
2 eggs
2 cups buttermilk
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ginger powder
1/4 cup melted butter Optional:
1 cup firm berries (such as blackberry
or strawberry, drained of any juice)

Mix of melted butter and oil for brushing griddle or pans.

Directions:
Heat griddle or non-stick pans, and brush with butter-oil mixture.

Beat eggs until fluffy, add buttermilk and vanilla and mix well.

In a bigger bowl, sift flour, sugar, baking powder, baking soda, salt and ginger. Add egg mixture and beat until a smooth batter results (no lumps).

Stir in melted butter and berries (optional). Please note: working berries is tricky, as the water in the fruit tends to dilute the batter, causing pancakes to stick more. If using berries, fold and cook in small, quick batches.

Brush butter-oil on griddle – cook away.
