Best Potato Salad

Description:
Traditional mayonnaise-based potato salad. The secret is adding pickle juice to potatoes while they are still warm.

Ingredients:
4 potatoes, peeled and sliced into 1/2" pieces
2 boiled eggs, sliced
1/2-stalk celery
1/4 cup sweet relish
1/4 cup chopped pickles
1/4 cup pickle juice I clove garlic chopped or 1/2 –tsp garlic powder
2 tbsp prepared mustard (any kind)
1/2 –cup mayo
I tsp salt (liberal use) and white pepper to taste – salad will need enough salt!
1/4 tsp celery salt
3/4 cup corn kernels (optional)

Directions:
Bring large pot of salted water boil. Add sliced potatoes. Cook until tender but firm.

In a large bowl, combine cooled potatoes, eggs, celery, sweet relish, chopped pickles, pickle juice. Combine gently. Seal tightly with wrap. Store in refrigerator until ready to serve.

Add mustard and mayo, folding gently.

Cover tightly in bowl or platter and refrigerate if intended for later use THE SAME DAY.
