Guiness Beef Roast

Description:
Unique, Irish-style beef roast with Guinness beer juices. Perfect crowd pleaser for holiday. Easy to make ahead.

Ingredients:
2 beef briskets (5-8 lbs each), trimmed and tied
Extra Virgin Olive Oil
Lots of garlic powder, Kosher salt, coarse pepper
1 large onion and 3 large tomatoes, coarsely blended together in food processor
1 gallon Guinness beer
(or a mixture of ginger-ale and tomato-based chili sauce)

Directions:
Pre-heat oven to 350

Generously dress all briskets with oil and garlic/salt/pepper. Place briskets in stainless steel hotel pans. Sear all sides under broiler or in a convection over, then remove from heat.

Generously add the chopped onion/tomato mixture to hot pan. Pour Guinness beer (or ginger ale mixture) in each pan to at least 2/3 of brisket level, cover with parchment, then tightly with foil.

Place in oven, reduce heat to 275. Cook at least seven hours.

Remove from heat to cool. Place overnight in fridge to let fat rise to the top and harden.

To prepare gravy, skim and throw away all fat. Remove cold briskets from pans and slice. Meanwhile, place pan with juices on the stove, reduce by half, then add salt & pepper to taste, cornstarch (mixed with water), and more garlic (if desired). Gravy should be thick and delicious.

Place sliced brisket to over-proof serving pan, then pour the hot gravy over the beef. Cover with parchment and foil, place pan in 300 oven at least 45 minutes. Serve.
