Blueberry Sauce For European Pancakes

Use with Lake Guntersville European Pancake

1 cup Blueberries
1/2 cup Water
1/2 cup Sugar
1 tsp Cornstarch
1/8 tsp salt
1 tsp butter
2 T lemon juice

Combine 1/2 cup berries & water in small pan & bring to boil. Reduce heat & simmer 3 min. Combine sugar, cornstarch & salt in cup & stir into berry mixture, stirring constantly until mixture thickens & boil 1 more minute. Add rest of berries & cook 3 min. longer. Stir in butter & lemon juice...Serve warm or cold .
