Mandarin Orange Cranberry Bread

Fruity with a citrus kick

In mixing bowl combine:

2 cups flour
1/2 cup sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 tablespoon orange zest

Then add:

3/4 cup dried cranberries
1 teaspoon orange extract
1/2 cup orange juice
2 tablespoons canola oil
1 egg

Mix until cranberries are broken into small bits
Then add:
1 12 oz. can mandarin oranges and pulse just until segments are broken.

Fold wet ingredients into dry ingredients just until flour disappears…do not over mix! Gently pour batter into greased pan. Bake for 20 minutes at 350F then reduce oven temp to 325F degrees until lightly browned about 15 additional minutes.
