Mrs. Beazley's Raisin Bran Muffins

Fluffy and Moist Raisin Bran Muffins

In a large bowl combine:
2 Cups boiling water
4 Cups Kellogs Raisan Bran Cereal
2 Cups Raisans

Set aside. In another large bowl combine:
2 Cups Sugar
4 Eggs
2 teaspoons Vanilla
2 Tablespoons canola oil
Beat until fluffy

NEXT, add alternately:
5 Cups flour
5 teaspoons baking soda
1 Cup wheat bran unprocessed
4 Cups low fat buttermilk

Finally, add:

Moistened cereal & raisin mixture. Mix well.

Spray muffin tins with non-stick cooking spray. Fill each 2/3's full of batter & bake in a 350 degree oven for 20-25 minutes.
