Sweetheart Chocolate Decadence Cake

A specialty of Carol Beazley that has evolved over the 27 years of owning the Inn. This Ultimate Indulgence is most often asked for as an addition for a Romantic Getaway Package, birthday, anniversary, engagement or any occasion to sweeten the experience.

1 oz unsweetened chocolate, Melted
1/2 cup canola oil
1 cup unsweetened cocoa powder
2 cups sugar
1 cup of low fat buttermilk
2 eggs
2 teaspoons vanilla
1 1/2 teaspoons baking powder
1 1/2 teaspoon baking soda
1 3/4 cups flour
1 cup boiling water

Decadent Frosting:
1 oz semisweet chocolate, melted
2/3 cup unsweetened cocoa powder
1 teaspoon vanilla
2 to 3 tablespoons strong brewed coffee
1/4 cup butter (melted)
1 1/2 to 2 cups powdered sugar (more or less for desired consistency)

Cake Batter:
In large mixing bowl combine the melted chocolate and oil (mix well until smooth) then add cocoa, sugar, buttermilk, eggs and vanilla. Add flour, baking powder and baking soda. Lastly add boiling water and mix well until smooth. Recipe makes one large or two small bundt cakes. Bake at 350 degrees for 15 minutes, then reduce to 325 degrees until done (about 35-40 minutes)

Melt chocolate. Add butter and melt. Mix all ingredients together, blending until smooth. If too thick, heat in microwave until pourable. This will frost one large or two small bundt cakes.
