Tomato Basil Frittata

Description:
Fluffy Egg and Cheese Frittata. Contents can include sliced potatoes, sausages, mushrooms, asparagus, artichokes and a variety of vegetables.

Ingredients:
In a blender, whirl together:
2 tablespoons flour
1/8 teaspoon of baking powder
1 teaspoon onion powder
8 eggs
1/2 cup liquid egg substitute
1 cup non-fat half and half
2/3 cup nonfat milk
In a 10" pie plate sprayed with vegetable spray, evenly distributed:
8 oz. Italian Blend Cheese or other shredded cheeses
1 Medium tomato sliced in round slices and placed on top of cheese (may use canned diced tomatoes)
Fresh Basil(May use dried basil) to taste, coarsely chopped and sprinkled over cheese and tomatoes.

Directions:
Slowly pour egg mixture over Cheese, tomatoes and basil. Bake in a 350 degree oven for approximately 60 minutes or until mixture is set.
