July 12 is Pecan Pie Day - 3 Recipes

Today is Pecan Pie Day! National Pecan Pie Day, in fact. So in honor of my favorite nut, I'm including recipes from the kitchens of our iloveinns' innkeepers including one who was born under her family's pecan trees (where she now has her inn - Chloe Tuttle.)

Chloe Tuttle of Big Mill B&B, Williamston, NC  said, "We use organic pecans from the trees that my folks planted here on the farm in 1922. When I was a child, I picked up pecans and sold them at Martin Supply Feed store. Last year I did the same thing. It's nice that some things don't change."  Here's Chloe's Blog with her recipe.
 
Maple Hill Manor's Bourbon Pecan Pie
Historic Maple Hill Manor, Springfield, Kentucky

Description:
Perfect dessert for Bourbon Lovers!

Ingredients:

1 cup sugar
3 tablespoons butter, melted
1/2 cup dark corn syrup
3 large eggs, beaten
1 1/2 to 2 cups pecan halves
2 tablespoons good-quality bourbon
1 (9-inch) deep-dish pie shell, unbaked

Directions:

Preheat the oven to 375 degrees F.
In a medium bowl, stir together the sugar and melted butter. Add the corn syrup, eggs, pecans, and bourbon, and stir until all ingredients are combined. Pour mixture into an unbaked pie shell, and place on a heavy-duty cookie sheet. Bake for 10 minutes. Lower the oven temperature to 350 degrees F, and continue to bake for an additional 25 minutes, or until pie is set. Remove from oven and cool on a wire rack.

Mocha Pecan Pie

Description:
The alliance of pecans and chocolate in this rich and luxurious dessert inspires sighs of deep satisfaction.

Ingredients:
nine-inch packaged pie shell
1 cup semisweet chocolate chips
3 tablespoons Kahlua
3 large eggs, beaten
1/2 cup firmly packed brown sugar
1 cup light corn syrup
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup (1 stick) butter, melted
1 1/4 cups toasted pecans, coarsely chopped

Directions:
Preheat oven to 350 degrees F.

Melt chocolate with Kahlua in top of double boiler; set aside. Combine eggs, sugar, corn syrup, vanilla and salt in bowl of an electric
mixer. Beat 1 minute on medium speed until blended; add chocolate mixture; stir to blend. Stir in butter and 1 cup pecans. Pour mixture into pie shell and sprinkle remaining pecans over the top.

Bake for about 45 minutes or until barely set in center. Pie will set as it cools.

Serve with whipped cream or ice cream and a great cup of coffee!



My Favorite Grandma's Homemade Pecan Pie
Franklin Victorian Bed & Breakfast, Sparta,  Wisconsin

Use you own favorite pie crust


3 eggs beaten - add in
1 cup brown sugar
1 cup syrup (light or dark)
Pinch of salt
1 tsp. vanilla

Add 1 cup pecan nuts on top

Bake 45 min. at 350 degrees
(test with knife like you do with pumpkin pie)

And just in case it's too hot to make pie,  pecans are wonderful by themselves one bite at a time.
