Breakfast Lasagna

Ingredients:
1 lb bulk sausage
1 cup margarine or butter
1 1/2 cups flour
1/2 gallon milk
1 box of lasagna noodles
Thin slices of assorted veggies: zucchini, yellow squash, colored peppers, asparagus, fresh spinach
4-6 cups shredded cheese (combination of Cheddar, mozzarella, Jack and Swiss
Parmesan Cheese

Directions:
Sausage Gravy
Sauté the sausage until done, Add butter and melt: add enough flour to make a good roux. Cook approximately 5 minutes. Add milk and continue cooking until a nice consistency is reached.
Cook noodles is salted boiling water according to directions. Drain.
In lasagna pan, place a thin layer of sausage gravy and layer of cooked noodles, a layer of veggies and a layer of mixed cheese. Continue layering, in this order, until dish is full. Top with a layer of cheese. Bake a 350 for approximately one hour.
This dish may be assembled the night before and covered with Pam sprayed foil. Leave foil on to bake then remove the last 15 minutes before serving.
