Chinese Almond Cookies

Ingredients:
1 cup butter, softened
1 1/2 cups confectioners’ sugar
1 egg
1/2 teaspoon almond extract
1/2 cup yellow cornmeal
1 1/2 cups all purpose flour
3/4 cup sliced almonds
1 egg yolk, mixed with 1 teaspoon water for glaze

Directions:
In a large bowl, cream the butter and sugar with an electric mixer until smooth. Blend in the egg, then add the almond extract, cornmeal, flour and sliced almonds. Beat to mix. Wrap the dough in plastic and refrigerate until firm but not hard.

Unwrap and shape into two logs, approximately 2 inches in diameter. Rewrap and freeze.

Spray non-stick oil on cookie sheet. Allow dough to defrost at room temperature until it has barely thawed enough to cut, about 10 minutes. Cut the logs into 1/4 inch round slices. Place on prepared sheets about two inches apart. Brush the cookies with the glaze and place an almond firmly in the center of each cookie. Bake in 325 degree oven for approximately 10 minutes or until the edges are lightly browned. (These cookies burn easily) Place the baking sheet on a wire rack to cool for 5 minutes. Transfer the cookies to wire rack and allow to cool.
