Lemon and Tarragon Chicken

Description:
This method of cooking leaves the chicken crispy and succulent

Ingredients:
1 - 3lb chicken, cut into pieces
2 salted lemons
4 kernels of garlic
salt and pepper
1/2 cup fresh chopped tarragon

Directions:
Salted lemons:
Slice two lemons into 1/8 inch slices
spread out on paper towels and salt heavily. Allow to sit overnight to remove liquid.
Rinse the lemons and store in oil in the refrigerator.
Stuff the skin of the chicken pieces with the lemon slices, tarragon and crushed garlic.
Salt and pepper to taste.
Place the chicken in a roast pan in a 425 degree oven for 1/2 hr. Turn off the oven and allow the chicken to remain in the oven for another 45 minutes. Serve with rice.
