A traditional Lebanese salad - it should be primarily a parsley salad with bulgar rather than the other way around

1 C bulgar wheat
3 bunches of Green Onions
3 bunches of Curly Parsley
1-2 large bunches of Spearmint
2 Medium tomatoes
1 C olive oil
2 Lemons, juiced
2 Tbs Cinnamon

Soak the bulgar wheat in Hot Water and then drain when it is soft.
Chop the green onions, parsley and mint. Add to the Bulgar Wheat.
Dice the tomatoes and add to the mixture.
Mix in the Olive Oil and Lemon Juice
Sprinkle on the cinnamon and salt to taste
