Almond Fingers
Description:
A perfect cookie to enjoy with a cup of your favorite tea. Ingredients: 1 cup butter or margarine 1/2 cup light brown sugar 1/2 cup granulated or bakers sugar 1 egg yolk, lightly beaten 1/2 teaspoon almond extract 1/2 teaspoon vanilla extract 2 1/4 cups flour 1 pkg (6 ounces) semi-sweet chocolate chips 1 teaspoon mint extract 1 Tablespoon vegetable oil 1 cup finely chopped almonds (or pecans) Directions: Preheat oven to 350 degrees. Cream butter and sugars together until fluffy. Beat in egg yolks and extracts. Stir in flour. Shape teaspoons of dough into 2-inch logs. Place on lightly greased (or non-stick cookie sheet) cookie sheet. Bake 10-12 minutes or until very lightly browned around edges. Remove from sheet and cool on wire racks. Melt chocolate chips, oil, and mint extract. Dip ends in chocolate and roll in chopped nuts. You can also sprinkle the nuts on. Allow chocolate to harden and enjoy!
