Pasta Fagioli

Ingredients:
2 Tablespoons olive oil
1 cup onion, chopped
3 gloves garlic, minced
2 cans (14 1/2 oz) Italian style stewed tomatoes, undrained
3 cups chicken broth
1 (15 oz) can cannelloni beans (white kidney beans),undrained
1/4 cup parsley, chopped
1 teaspoon dried basil leaves
1/4 teaspoon ground black pepper
4 oz. (1 cup) uncooked small pasta shells

Directions:
Heat oil in 4 quart Dutch oven over medium heat until hot; add onion and garlic. Cook and stir 5 minutes or until onion is tender.
Add tomatoes, chicken broth, beans, parsley, basil and pepper. Bring to boil over high heat stirring occasionally. Reduce heat and simmer 10 minutes. Add pasta and simmer 10 -12 minutes until pasta is just tender. Serve immediately.
Crock Pot adaptation: Cook onion and garlic as above. Add onion garlic and all ingredients except pasta. Cook on low for 1 hour. Add pasta and continue cooking for 1 hour or until pasta is just tender.
Serve with crusty warm bread.
