Chicken aAnd Broccoli Quiche

A hearty dish this is excellent for breakfast or served with a light salad for brunch or dinner.

Pastry dough for 9 inch pie1/4 pound (4 oz) Gruyere or Swiss Cheese, grated
1 1/4 cups (5 oz) cooked chicken, cut into 1 inch pieces
8 medium mushrooms
1 small onion, diced
1 Tablespoon butter or margarine
1 pkg (10 oz) frozen chopped broccoli (defrosted & squeezed dry in paper towel)
4 eggs
1 1/2 cups heavy cream (can use 1/2 & 1/2)
1 teaspoon salt
1/4 teaspoon dried tarragon

Line 9 inch pie pan with pastry dough. Preheat oven to 350 degrees.

Melt butter in skillet and cook the mushrooms and onion, stirring frequently until most of the moisture has evaporated.

To assemble quiche, sprinkle 1/2 of the cheese over the bottom of the pan, followed by a layer of broccoli, followed by a layer of chicken, followed by a layer of onion & mushroom mixture, top with remaining cheese.

In mixing bowl mix together eggs, cream, salt, tarragon. Pour over layers in quiche pan.

Bake for 10 mins. at 350 degrees, then reduce temperature to 325 degrees and continue baking for 20 - 25 minutes more or until filling is browned and firm. Let stand 10 minutes before serving.
