Fudge Filled Peanut Butter Cookies

These cookies disappear so quickly you will want to make a double batch. Ingredients: 1/2 cup butter 1/2 cup peanut butter 1/2 cup sugar 1/2 brown sugar 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 egg 1/2 teaspoon vanilla 1 1/2 cups flour Sugar Fudge Filling 6 ounces semi-sweet chocolate chips 3/4 cup sour cream Directions: In large mixing bowl cream butter and peanut butter. Add sugar, brown sugar, baking soda and baking powder. Beat until combined, scraping bowl as needed. Beat in vanilla and egg. Add flour and mix completely. Shape dough into 2 inch balls and roll in sugar. Place on ungreased cookie sheet and flatten with fork. Bake at 375 degrees for 7-9 minutes. Remove to wire rack and cool. Once cool, frost bottom sides of cookies with fudge filling and place two chocolate bottoms together to make a sandwich. Store cookies covered, in refridgerator. To make fudge filling: In small saucepan melt 12 oz semisweet chocolate over low heat, stirring constantly. Remove from heat and stir in 1 1/2 cups sour cream and 3/4 cup finely chopped peanuts (optional). Cool. Mixture will stiffen as it cools.
