Angel Puffs

A delicious breakfast treat made with scrambled egg, cheese, mushrooms over baked puffy crust covered with a cheese sauce and sauteed mushrooms

6 Puff pastry crusts
12 eggs
1 pack sliced mushrooms
1 cup 1/2 and 1/2
2 cups shredded cheese
Wondra flour mixture

Place 6 puff pastries in the oven and cook following directions.
While pasries are cooking aproximately 20 minutes, Sautee the mushrooms in butter and salt and pepper until cooked. Keep warm.
Mix up the 12 eggs and scramble them in a frying pan with butter add 1 cup of the shredded cheese. Cook until done.
In a small sauce pan melt 1/2 stick of butter, 1 cup of shredded cheese and 1 cup of half and half. Cook until blended and warm.
Add Wondra sauce flour to thicken.
Take the cooked pastry puffs and split them in half. Put about three tablespoons of srambled egg mixture on the puffs. Take about 3 tablespoons of cheese sauce and pour over the eggs. Garnish with Sauteed mushrooms and serve hot.
