Easy Pan Fritta

Easier then an omelett and delicious.

6 eggs
one zuccinni julienned
1summer squah julienned
3 scaillions cut small
one red pepper julienned
sliced mushrooms about one cup
1/2 stick butter.
Fresh basil, pregeno, parsley, tyme choopped or your favorite seasoning to taste.

Salt and pepper to taste.

1 cup shredded cheese

Cut up all of the ingredients except the eggs and suatee in the butter until crisp tender.

Cook on meduim high heat.

Mix up the 6 eggs in a blender and pour over the sauteed veggies.

Pour excess mixture to each side of the pan until eggs solidify.

When the eggs are all solidified, place to pan under the broiler until the top of the fritta is no longer wet. At this time sprinkle with the shredded cheese and place back under the broiler until the cheese has melted.

Slice in half or quaters.

Sevre warm with toast.
