Buffalo Chicken Sandwiches

Description:
A very quick meal for those "I just don't feel like cooking" nights.

Ingredients:
Hoagie Buns
Blue Cheese or Ranch Dressing
Scallions
Boneless, Skinless Chicken Breasts or Tenders
Paprika
Chili Powder
2 TBS butter
Hot Sauce

Directions:
Heat a grill pan. Chicken: in bowl place small amount of olive oil (about 3 TBS). Add a pinch of paprika and 4 TBS Chili powder. Sprinkle with black pepper. Dip chicken in mixture and place on grill. Cook until juices run clear and set chicken aside. Make Sauce cooking 1/4 cup hot sauce and 2 TBS butter over low heat. Dip grilled chicken into sauce. Place on bun. Spread with blue cheese or ranch dip and top with lettuce if desired.
