Raspberry Struesel Muffins

Description:
These muffins are wonderful when fresh raspberries are in season!

Ingredients:
Topping: 1/4 cup brown sugar; 1/4 cup pl. flour; 1/4 cup chopped walnuts; 2 TBS of melted butter

Muffins: 1/2 cup butter, melted; 1 egg, beaten; 1/2 cup milk; 1 1/2 cups plain flour; 1/2 cup sugar; 2 tsp. baking powder

Fresh raspberries

Directions:
For topping stir together brown sugar, flour, walnuts and melted butter. Set aside.

For muffins: Stir together flour, sugar and baking powder and set aside. Mix together melted butter, egg and milk. Stir flour mixture into liquid just until moistened. Spray muffin pans. Spoon 1/2 of the batter into cups. Break and spread 1 large raspberry or two small berries in each muffin. Place 1/2 tsp. of topping mixture over raspberry. Bake 15 minutes, cool slightly and remove to wire rack. Serve at room temp.
