Down South Peach Skillet Pie

Get out your trusty cast iron skillet and put together this yummy cobbler. Grandmother couldn't make better!

2 C biscuit mix
2 T sugar
3/4 C cream (very scant)
6 fresh peaches
3/4 C brown sugar
1/2 tsp salt
1/4 tsp cinnamon
2 T butter
2 T rum

Mix sugar and biscuit mix, add scant cream. Roll out dough 1/4” thick. Place in 8” skillet and let 1 1/2 inch dough hang over. Cover w/peaches, sugar, salt and cinnamon. Fold hanging edge to center. Bake for 20 min, add butter and rum through center. Bake 5 min more. Serve warm. Add cream or ice cream if desired. 425 oven
