My 92 year old step-mother makes these for my 93 year old Dad - he kicks up his heels when he sees them come out of the oven. Big glass of cold milk and a few of these and he's a happy man! Ingredients: Cream until light, 1 C butter, 1 C brown sugar (firmly packed), 1 C sugar. Add 1 egg and mix in. Add 1 C salad oil, 1 C rolled oats (quick), 1/2 C coconut, 1/2 C chopped nuts – pecans or walnuts, 1 cup crushed corn flakes. Stir until well mixed. Add 3 1/2 C flour, 1 tsp salt, 1 tsp soda, 1 tsp vanilla. Note: Crushed cornflakes can be found precrushed and packaged in a box. Directions: Mix together, form into walnut-sized balls. Flatten onto ungreased cookie sheet. Bake at 325 for 18-20 min. Let cool slightly before removing. Don't ask how many this recipe makes - I've never been able to count them! As they come out of the oven, they are like a magnet to everyone who smells them - they all have to grab a few. Crunchy and flavorful!
