Rosemary Olive Oil Bread

Rosemary and Olive oil - what a combination. This bread is quick and aromatic, not to mention delicious!

2 1/2 C all purpose flour
3/4 C sugar
1/2 C walnuts, chopped
2 tsp baking powder
2 tsp dried rosemary
1/4 tsp salt
1 T lemons, zest of, grated
2 eggs, lightly beaten
3/4 C white wine or apple juice
1/2 C extra virgin olive oil
cooking spray

Heat oven to 350

Coat a loaf pan with vegetable cooking spray, covering sides well.

In large bowl, stir together flour, sugar, walnuts, baking powder, rosemary, salt and lemon zest.

In separate bowl, mix eggs, wine and olive oil, then stir into dry ingredients.

Pour the batter into pan and smooth the surface.

Bake 55 minutes or until toothpick inserted into the center comes out clean.

Cool in pan, turn out and enjoy!
