Pumpkin Pie Cake – Smaller Version

It's Fall here in the mountains, and the first recipe of the season is this Pumpkin Pie Cake. Orignal recipe was for 8 1/2 x 11 pan, but it was too much of a good thing for two people, so I cut it in half, and saved the remaining mix for another time.

1 regular size (not large can) pumpkin
box yellow cake mix, divided
smallest can evaporated milk plus 2 T
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
pinch ginger
1 egg
1/2 C white or brown sugar

Mix and pour into 8x8 pan. Sprinkle with 1 1/2 C plus 4 T yellow cake mix (save other half for another cake), and 1/2 C chopped nuts. Pour over the top 3/4 stick melted butter. Bake 50-60 minutes at 350.
