This pie is always made by one of our favorite and often-returning guests when they stay in one of our Cottages. Finally she agreed to share the recipe with me. It makes a big beautiful pie - reminiscent in flavor to mince meat. Serve at room temp. Ingredients: Prepare double crust pie shell Mix together: 1 tsp cinnamon 1/2 tsp cloves 1/2 tsp nutmeg 1 C sugar 1 T tapioca 4 C (4 large) thinly sliced apples (Golden Delicious) 1 C snipped dried figs 1 C cranberries, fresh or frozen 1/2 tsp grated lemon peel 1/4 C lemon juice Directions: Fill shell, cover with top crust and crimp edges. Cut leaves or other shapes from extra dough and cut vent slits in top. Brush crust w/ egg yolk and 1 T water. Recipe Summary: Yield: 1 large pie Prep Time: 35 minutes Cook Time: Bake 450 for 15 minutes, then 350 for 30-35 minutes.
