Fresh Apple Cake

Fall fresh apples make a quick, moist and delicious cake.

1 C corn oil
3 eggs
2 C sugar
1 tsp vanilla
3 C flour
1 tsp salt
1 tsp soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cloves
1 C chopped pecans
1 C coconut, optional
3 C chopped apples – we prefer Granny Smith

Beat oil, eggs, sugar, and vanilla together until smooth. Mix remaining ingredients together and fold into oil mixture. Pour into a bundt- type pan sprayed with cooking spray. DO NOT FLOUR THE PAN. Put in cold oven and set at 350 for 60 min. Check with toothpick. When done turn out onto a rack to cool. A glaze can be made to drizzle over the top. Last time I served this, I poured a little carmel ice cream syrup on the plate, then added a few slices of banana then topped with a slice of this yummy cake.
