Banana Crunch Muffins

Description:
Banana muffins with a little crunch!

Ingredients:
2 cups flour
1 cup brown sugar
1 T baking powder
3/4 cup oil
1/2 T cinnamon
1 tsp. vanilla
1 tsp. salt
2 1/2 cups Banana Crunch Cereal
3 eggs
1 chopped banana
1 cup pineapple juice

Directions:
Preheat oven to 375 degrees. Mix flour, baking powder, cinnamon and salt in large bowl. Set aside. Beat eggs and juice with wire whisk. Add brown sugar, oil and vanilla; mix well. add to dry ingredients, stirring until moistened. Stir in cereal and banana. Spoon batter in sprayed muffin pan. Top with streusel and bake at 15-18 minutes until golden and sides are pulling away from edges of muffin tin. Makes 12 large muffins.
Streusel: 1 cup Post Selects Banana Crunch Cereal, 4 T brown sugar, 1 tsp. cinnamon, 2 T oil. Mix together dry ingredients. Pour oil over the top and mix thoroughly with a fork until mixture crumbles.
