Zucchini Raisin Bread

Zucchini bread with raisins and a lot of other good things!

4-5 eggs
1 cup Raisin Whole Grain Cereal
3/4 cup oil
1 1/2 cup flour
1 1/2 tsp. vanilla
1 T baking powder
3/4 cup brown sugar
1/2 T cinnamon
3 cups shredded zucchini
1/2 tsp. salt

Spray 2 loaf pans--one 8" x 4" and one 9" x 5". Beat eggs, oil and vanilla in a bowl with a wire whisk until well blended. Stir in sugar. Add zucchini and cereal, mix well. Let stand 5 minutes. In a separate bowl combine flour, baking powder, cinnamon and salt. Mix well; add to cereal ingredients, stirring until moistened. Pour into loaf pans. Bake at 350 degrees for 45-55 minutes or until wooden toothpick comes out clean. Cool in pans on wire rack for 10 minutes. Remove from pans and cool thoroughly on wire racks. May be stored in freezer for up to 1 month. Before serving, thaw in fridge overnight
