Black Walnut Lemon Bread

Description:
Lemon bread with black walnuts harvested from our farm!

Ingredients:
2 sticks butter
1 cup milk
1 1/2 cups sugar
1 cup chopped black walnuts
4 eggs, separated
2 tsp. baking powder
3 cups flour
dash of salt

Directions:
Preheat oven to 350 degrees. Spray 2 loaf pans--one 8" x 4" and one 9" x 5". In large mixing bowl, cream butter. Gradually beat in sugar. Add egg yolks one at a time, beating well after each addition. Stirring by hand, add flour alternating with the milk. Stir in walnuts. Add the baking powder. In a separate bowl combine the egg whites and salt. Beat until stiff peaks form. Gently fold into bread batter. Pour into loaf pans. Bake at 350 degrees for 40-45 minutes or until wooden toothpick comes out clean. Cool in pans on wire rack for 10 minutes. Remove from pans and cool thoroughly on wire racks. May be stored in freezer for up to 1 month. Before serving, thaw in fridge overnight. Make lemon syrup just prior to serving.

Lemon Syrup: Combine 1/2 cup sugar, 1/4 cup lemon juice and 1/4 cup water in small saucepan. Cook, stirring constantly over medium heat until sugar dissolves and begins to boil. Remove from heat. Brush over top of loaves. (If serving only one loaf, cut ingredients in half.)
