Fig Bread

Wonderfully different, fig bread Ingredients: 3 3/4 cups flour 1 1/2 cup sugar 3/4 cup oatmeal 1 1/2 cups chopped dry figs 3 1/2 tsp. baking powder 1 1/2 cups chopped black walnuts 3/4 tsp. baking soda 3/4 cup brown sugar 1/2 tsp. salt 3/4 cup oil 4-5 eggs Directions: Spray 2 loaf pans--one 8" x 4" and one 9" x 5". Combine first 5 ingredients in a bowl; make a well in the center of the mixture. In a separate bowl combine the remaining ingredients. Mix well; add to dry ingredients, stirring until moistened. Pour into loaf pans. Bake at 350 degrees for 45-55 minutes or until wooden toothpick comes out clean. Cool in pans on wire rack for 10 minutes. Remove from pans and cool thoroughly on wire racks. May be stored in freezer for up to 1 month. Before serving, thaw in fridge overnight.
