Upside Down Cranberry Coffee Cake

Delicious cranberry and hearty black walnuts from the farm!

3/4 cup whole cranberry sauce
1/4 tsp. almond extract
1/4 cup finely chopped walnuts
1 cup flour
3/4 cup sugar
1/2 tsp. baking powder
1/2 stick butter, softened
dash salt
2 eggs
powdered sugar

Combine cranberry sauce, walnuts and 1/4 cup sugar; layer half of mixture into a sprayed 8" cake pan. In electric mixer, combine rest of ingredients in order except powdered sugar. Fold in remaining cranberry mixture. Spread over bottom layer. Bake at 350 degrees for 25 to 30 minutes until toothpick comes out clean. Let cool; then run spatula around sides of pan and turn onto serving plate. Dust with powdered sugar. Serves eight.
