Blueberry Muffins
Description:
Healthy muffins loaded with blueberries
Ingredients:
1 1/4 cup flour 1/4 cup brown sugar 1 cup oatmeal 2 tsp. baking powder 1/2 tsp. vanilla 1/4 tsp. salt 1 cup blueberries 1 cup milk 1 egg 3 T canola oil
Directions:
Combine first 6 ingredients in a bowl; make a well in the center of the mixture. Combine milk, egg and oil; add to dry ingredients, stirring until moistened. Fold in blueberries. Spoon batter in sprayed muffin pan. Bake at 425 degrees for 23 minutes or until golden. Makes 6 large muffins.
