Very Strawberry Muffins
Description:
Muffins, popping with strawberries!
Ingredients:
1/2 cup sweetened strawberries
3 cups flour
1 1/2 cup oil
2 tsp. baking soda
1 1/2 cup sugar
1 1/2 tsp. vanilla
4 eggs
1 tsp. salt
hickory nuts or pecans
Directions:
Run strawberries through a chopper. Reserve 2 T juice for glaze. Combine oil, sugar and eggs; mix well by hand. Add remaining ingredients except for nuts. Spoon batter into sprayed muffin pans. Sprinkle nuts over the top of muffins. Bake at 350 degrees for 17 minutes or until golden brown. Makes 12 large muffins.
Glaze: with 1 cup powdered sugar than has been mixed with 2 T strawberry juice.
