Cherry Streusel Muffins

Great cherry muffins

1 1/4 cup flour
1/4 cup brown sugar
1 cup oatmeal
2 tsp. baking powder
1/2 tsp. vanilla
1/4 tsp. salt 1 cup frozen cherries, thawed
1 cup milk
1 egg
3 T oil

Combine first 6 ingredients in a bowl; make a well in the center of the mixture. Combine milk, egg and oil; add to dry ingredients, stirring until moistened. Fold in cherries. Spoon batter in sprayed muffin pan. Top with streusel and bake at 425 degrees for 23 minutes or until golden. Makes 6 large muffins.

Streusel: 1/4 cup flour, 1/4 cup finely chopped walnuts, 1/2 cup brown sugar, 1/4 cup oatmeal, 1/4 tsp. cinnamon, 1/4 cup melted butter. Mix together dry ingredients. Pour butter over the top and mix thoroughly with a fork until mixture crumbles.
