Saturday Morning Casserole

Ingredients:
3 cups frozen Potatoes O'Brien
3/4 cup shredded Monterey Jack cheese with Jalapeno peppers
1 cup diced fully cooked ham or Canadian bacon
1/4 cup sliced green onion
4 beaten eggs
1 twelve oz. can lowfat evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt
4 dashes of Tabasco

Directions:
Grease a 2-quart square baking dish. Arrange potatoes evenly in the bottom of the dish. Arrange ham, green onion, cheese on top of potatoes.
In a medium mixing bowl combine eggs, milk, pepper, salt, and Tabasco. Pour egg mixture over potato mixture in dish (the dish may be covered and refrigerated at this point for several hours or overnight). Bake, uncovered in a 350 degree oven for 40-45 minutes (or 55 to 60 minutes if made ahead and chilled) or until center appears to be set. Let stand 5 minutes before serving.

This recipe makes 6 servings. This recipe can be double to feed 12 people. Use a 13 x 15 inch baking dish. To keep the top from turning too brown we cover with foil the last 15 minutes of baking.
