Autumn Harvest French Toast
Description:
A make ahead French Toast topped with apples & cranberries. Perfect for a fall brunch. Ingredients: 1c. Brown sugar 1.5c. melted butter 3t. cinnamon 3 thin sliced tart apples 1/2c. dried cranberries 1 loaf 3/4 in. slices Italian Bread 6 eggs 1.5c. milk 1T. vanilla Directions: 1.Mix apples and cranberries. Melt brown sugar,butter & 1 tsp. cinnamon pour over apples and cranberries. Toss to coat well. Spread apple mixture evenly over bottom of greased 9X13 baking dish. Arrange slices of bread on top. 2.Mix eggs,milk,vanilla and remaining 2 tsp of cinnamon until well blended. Pour mixture over bread,soaking bread completely.Cover and refrigerate until next morning. 3.Bake,covered with aluminum foil in a pre-heated 375degree oven for 40 minutes. Uncover and bake 5 minutes more until browned and puffy. Remove from oven, let stand 5 minutes. Loosen edges of french toast. 4.Put a jelly roll pan over top of the baked french toast and flip it over so the apple mixture is now on top. Cut into serving size pieces and top with a dollop of light sour cream or plain yogurt.
