Light Spinach Quiche
Description:
An easy breakfast quiche without the traditional crust. Ingredients: 1 pkg.chopped frozen Spinach-thaw and drain 1 c. sour cream 1 c. cottage cheese 2 eggs 1/2 c. Baking mix (Bisquick) 1/4 c. melted margarine 1/4 t. lemon pepper 1/4 t. dill weed parmesean cheese Paprika Directions: 1.Preheat oven to 350 degrees. Grease a pie pan. 2. Squeeze out any extra moisture in the spinach. Spread spinach on bottom (you may find one package is too much so use what best suits your taste). 2.Beat sour cream, cottage cheese, eggs, margarine, baking mix, lemon pepper and dillweed until light, pour over the spinach. Sprinkle with parmesean cheese and a little paprika. 3. Bake 350 degrees 35 minutes or until knife inserted just off center comes out clean. Cut into slices and serve warm. 4. For a variation sprinkle some shredded cheddar or swiss cheese over the spinach before adding the filling.
