Creamy Scrambled Eggs
Description:
A simple way to make eggs very light and creamy. Ingredients: 4 large eggs 1 T. light cottage cheese 1/8 t. sill weed 1/8 t. lemon pepper 1 T. Butter Directions: 1.Crack the eggs into a bowl. Whisk the eggs well. Add the cottage cheese, seasonings and salt and pepper to taste. 2.Heat a medium fry pan with 1 tbl. butter until the butter sizzles. 3. Whisk the egg mixture hard so the mixture is frothy, and pour immediately in the hot fry pan. Use a heat proof spatula to gently stir the eggs, folding the cooked eggs as you work until all are cooked (don't over stir the eggs as this makes them tough). Serve immediately garnished with chopped parsley or finely sliced green onions and sprinkled with paprika. These can be made even more special by mixing in 2-3 tbl. chopped ham or smoked salmon when you put the eggs in the pan. You can also serve the eggs mounded on a small ham slice that has been warmed.
